Kale is one of my favorite vegetables because it delivers so much nutrition in every bite. Kale can be incredibly delicious when it’s prepared the right way. It’s packed with fiber, antioxidants, and compounds that support your body’s natural detox pathways and overall vitality. This salad highlights everything I love about kale—massaged with olive oil and lemon to soften the leaves and topped with olives and pine nuts for crunch. Want an even more balanced meal? Dr Hyman's Raw Kale Salad

Ingredients

  • 1 large bunch of kale, stems removed, thinly sliced and chopped
  • ¼ cup lemon juice 
  • 1 lemon zested
  • ¼ cup olive oil
  • 1 minced garlic clove
  • 1/8 teaspoon sea salt
  • ¼ cup toasted pine nuts
  • ½ cup Kalamata olives, chopped

Method 

Step 1

Add kale, lemon juice, zest and olive oil to a large mixing bowl and massage with your hands for about a minute to soften kale.

Step 2

Add remaining ingredients and toss to combine.

Step 3

Allow the salad to rest and soften for about 15 minutes before serving.
