Paleo Trail-Mix Muffins

You already know I love a good muffin, and this one has quickly become a favorite in my house. It brings together everything you’d want from a trail mix, with nuts, seeds, and just enough natural sweetness in a form that’s easy to grab and actually satisfying. Great for a quick breakfast or whenever you need something on hand.

Paleo Trail-Mix Muffins

 Ingredients

  • 1 large apple, cored
  • 1 large carrot, peeled
  • 2 large pasture-raised organic eggs
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons maple syrup
  • 2 cups almond flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 tablespoons ground flaxseed
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • ⅓ cup raw pumpkin seeds
  • ⅓ cup raw sunflower seeds
  • ½ cup dried cherries or cranberries

Method 

Step 1

Preheat the oven to 350°F. Line a standard 12-cup muffin tin with paper liners.

Step 2

In a food processor fitted with the grater attachment (or with a box grater), grate the apple and carrot.

Step 3

Switch out the grater attachment for the standard food processor blade. Add the eggs to the carrot and apple and pulse a few times, until the mixture comes together.

Step 4

Add the olive oil, maple syrup, almond flour, baking soda, baking powder, flaxseed, cinnamon, and salt. Blend until the mixture is almost smooth. With a spatula, gently stir in the pumpkin seeds, sunflower seeds, and dried fruit until combined.

Step 5

Using an ice cream scoop or large spoon, evenly scoop the mixture into the prepared muffin cups. Bake for 25 to 28 minutes, until the muffins are puffed and golden. Allow to cool completely before serving.

Step 6

Store leftover muffins in an airtight container in the refrigerator for up to 1 week.
