Ingredients
- 2 tablespoons avocado oil
- 1 teaspoon chili flakes
- 5 large garlic cloves, thinly sliced
- 1 small yellow onion, very finely diced
- 1 ½ tablespoons red wine vinegar
- 1 (18.3-ounce) can crushed or whole red tomatoes
- ¾ teaspoon sea salt
- ½ teaspoon freshly ground black pepper
- ⅓ cup fresh basil leaves
- 1 tablespoon fresh oregano or marjoram
Method
Step 1
Heat the avocado oil in a large saucepan, over medium heat. Add the chili flakes and garlic cloves, sauté until fragrant, about 2 minutes.
Step 2
Add the onions and sauté for an additional 5 minutes, stirring occasionally, until onions are translucent.
Step 3
Add the red wine vinegar and simmer for 1 minute until liquids have evaporated.
Step 4
Add in the tomatoes, salt, and pepper, stir to combine. Break the tomatoes up (if using whole) using a wooden spoon and bring to a simmer. Simmer for 25 minutes, stirring occasionally to avoid burning on the bottom of the pan.
Step 5
Once the sauce has thickened and reduced by about one-third, add the herbs, stir and simmer for 2 minutes.
Step 6
Serve immediately with your favorite pasta of choice or allow to cool and store in the refrigerator for up to 3 days to use in any other of your favorite dishes, like shakshuka eggs.
