Garlic Butter Steak with Sautéed Mushrooms & Brussels Sprouts

Ingredients

  • 4-6 oz grass-fed steak (sirloin, ribeye, or strip)
  • 1 tbsp grass-fed butter + 1 tsp ghee for cooking
  • ½ cup sautéed mushrooms
  • ½ cup roasted Brussels sprouts
  • 1 clove garlic, minced
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • sea salt to taste
  • Fresh thyme (garnish)

Method

Step 1

Preheat oven to 400°F (200°C). Toss Brussels sprouts with ghee, salt, and pepper, and roast for 20-25 minutes until crispy.

Step 2

Heat a skillet over medium-high heat. Season steak with salt, pepper, and paprika. Sear for 3-4 minutes per side until desired doneness (130°F for medium-rare).

Step 3

While the steak rests, melt butter in the same skillet and sauté mushrooms and garlic for 3–5 minutes until tender.

Step 4

Serve steak with roasted Brussels sprouts and mushrooms. Top with fresh thyme and extra melted garlic butter.
