Lemon Herb Chicken & Veggies

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red onion, cut into wedges
  • 1 lemon, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • salt and pepper to taste

Method 

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Arrange the chicken breast, zucchini, yellow squash, and red onion on a sheet pan.

Step 3

Drizzle with olive oil, sprinkle with oregano, salt, and pepper, and place lemon slices on top of the chicken.

Step 4

Roast for 25-30 minutes, until the chicken is cooked through and the veggies are tender.
