Ingredients
- 4 Fresh Ripe Peaches peeled and diced (or 2 cups frozen peaches)
- 3 Scallion Shoots chopped
- 1 1/2 Tablespoons Extra Virgin Olive Oil
- 2 Tablespoons Fresh Cilantro
- 2 Tablespoons Fresh Lime Juice
- 1/2 Teaspoon Jalapeno Peppers diced (or to taste)
- 1 Pinch Sea Salt
Method
Step 1
Heat peaches in a small saucepan over low-medium heat; if using fresh peaches, add 2 tablespoons water to the pan.
Step 2
Add scallion, olive oil, cilantro, lime juice, jalapeno, and salt. Cook on medium-low heat until peaches are mushy.
Step 3
The mixture should not be a sauce, however flavors should combine for about 12 – 15 minutes. Serve warm or cooled.
