Quick Veggie Scramble

This veggie-packed egg scramble has what your body actually needs to power through the morning: protein from cage-free eggs, fiber from non-starchy veggies, and healthy fats from avocado. Quick Veggie Scramble

Ingredients 

  • 3 cage-free eggs
  • ½ tomato, diced
  • ¼ onion, diced
  • 1 cup spinach
  • ½ avocado, diced
  • 1 teaspoon olive oil
  • Salt and pepper, to taste
  • Optional: rosemary, thyme, oregano

Method 

Step 1

Whisk the eggs in a small mixing bowl.

Step 2

Heat the olive oil in a medium frying pan over medium heat.

Step 3

Add the diced onion and cook until translucent, about 2-3 minutes.

Step 4

Stir in the tomato, avocado, and optional spices, cooking for another 1-2 minutes. Add the spinach and cook until wilted.

Step 5

Pour the whisked eggs over the veggies. Cook, gently folding the eggs over the ingredients, for 2-3 minutes until set. Serve and enjoy!
