Ingredients
- 2 cups diced, firm tofu
 
- 2 cups shitake mushrooms or another mushroom of your choice
 
- 1 cup cooked quinoa
 
- 4 cups spinach, kale or other leafy green of your choice
 
- 1 inch shaving of fresh ginger
 
- 2 garlic cloves crushed
 
- 1 tablespoon sesame seeds
 
- Bragg Liquid Amino – soy sauce alternative
 
Method
Step 1
Heat olive oil in saucepan
Step 2
Add ginger, garlic, sesame seed and spinach and cook until the spinach is reduced, stirring often
Step 3
Add tofu and cooked quinoa and cook until tofu and quinoa are thouroughly heated
Step 4
* You marinate the tofu in Bragg Liquid Amino for a 15 minutes before dicing
Step 5
* Substitute Bragg Liquid Amino with Dr. Hyman’s Ultra Broth and let the ingredients simmer
