Ingredients
Dough
- 1 cup cashew butter
- 1 cup vanilla Farmacy Super Simple Grassfed Protein
- 1 orange, zested, divided
- 3 tablespoons orange juice
- 1 tablespoon shredded coconut
- ½ tablespoon vanilla bean paste
- ½ teaspoon sea salt
Glaze
- ⅓ cup coconut butter
- ½ teaspoon coconut oil
- Zest from remaining steps above
Method
Step 1
Combine cashew butter, vanilla protein powder, 1 teaspoon of zested orange, orange juice, shredded coconut, vanilla, and sea salt in a large mixing bowl. Using a spatula, combine all of the ingredients into a dough.
Step 2
Scoop 1 tablespoon at a time and roll into balls using your hands. Repeat until you have 20 balls. Transfer onto a parchment paper lined baking sheet or a tray and transfer to the freezer for 5 minutes while making the glaze.
Step 3
On a double burner or in the microwave, melt the coconut butter along with the coconut oil. Stir to combine.
Step 4
Remove balls from the freezer and coat with glaze.
Step 5
Transfer balls back into the freezer for 5 more minutes, then repeat the glazing process and sprinkle with the remaining orange zest overtop immediately after glazing for the second time.
Step 6
Store in the fridge for up to 2 weeks or freeze for up to 2 months.
