Mediterranean Chicken & Veggies

Ingredients

  • 4 chicken thighs, skin-on
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Method 

Step 1

Preheat the oven to 425°F (220°С).

Step 2

Arrange the chicken thighs, bell peppers, onion, and cherry tomatoes on a sheet pan.

Step 3

Drizzle with olive oil, sprinkle with thyme, rosemary, salt, and pepper.

Step 4

Roast for 35-40 minutes, until the chicken is golden and the vegetables are roasted.
