Rosemary Citrus Mocktail

Today I wanted to share a quick and easy recipe for a cocktail alternative. This Rosemary Citrus Mocktail is super refreshing and makes a really beautiful drink to toast for the New Year.

If you can plan a bit ahead, freezing the pomegranate arils within ice cubes is a nice touch, but you can also use regular ice and add the arils on top of the drink as a garnish. Blending an orange creates a frothy texture that layers well with the sparkling water, and a tiny bit of apple cider vinegar complements the sweetness of the orange and adds extra support for blood sugar and digestion.

Rosemary Citrus Mocktail Easy Healthy Recipe

Ingredients

Garish

  • ¼ cup pomegranate arils
  • Filtered water
  • Orange peel
  • Rosemary stems

Mocktail

  • 1 medium orange
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon apple cider vinegar
  • 1 teaspoon orange blossom water (optional)
  • 11.5 ounces sparkling mineral water

Method

If making pomegranate ice cubes, add pomegranate seeds into an ice tray, add water, and place in the freezer. (The photos show ice cubes from a round mold but traditional cubes work great, too.) If you don’t have time to do this prior, you can use regular ice and add pomegranate arils on top of the drink.

Peel the orange in large pieces using a veggie peeler, then slice into thin matchsticks and set aside.

Remove the white stringy pith from the orange and discard, then add the orange into a high speed blender and blend along with the lemon juice, apple cider vinegar, and orange blossom (if using) and blend until frothy.

Add the pomegranate ice cubes into two glasses, then divide and pour sparkling water overtop.

Top with frothy orange juice and garnish with rosemary stem, orange peel, and pomegranate arils.
